Meal prepping a versatile meal will help you enjoy healthy food all week long while not getting bored! If you are busy and short on extra time but get bored easy, a versatile meal would be a great idea for you.

Sheet Pan Chicken Fajitas is a great example of a versatile meal. It's a meal that's full of protein and nutrients that can be enjoyed in so many ways. You cook it all on one pan and then you can enjoy it by itself, on a salad, over rice, over potatoes, in tortillas, or even with some cheese on chips. All of these options keeps things exciting all week!
You can customize this recipe as you want with other veggies or you can even add or sub steak. Also, none of these measurements have to be exact! You can add or take away what you like more of.
Sheet Pan Chicken Fajitas
Ingredients:
1 1/2 lbs chicken breast
3 bell peppers (you can choose which color, I did one of each!)
1 onion (I used purple but you can use yellow!)
1-2 cloves garlic
1 lime
1/4 cup chopped cilantro (add more on top when plating!)
3 tbsp olive oil
You can season with fajita seasoning or do your own mix. Some ideas if doing your own are a mix of sea salt, pepper, garlic powder, onion powder, chili powder, and cayenne pepper.
Instructions:
Cut chicken, peppers, and onions into strips and chop the garlic.
Toss everything in the olive oil and add your seasonings.
Spread everything onto a sheet pan. Cook at 425 degrees for 15-20 minutes. Just make sure that the chicken is done!
Squeeze the lime on top and toss with the cilantro.
Serve however you want!
Whichever way you eat it, you can top with avocado, cheese, pico, or salsa!
